These mini bars are a brilliant treat for when you fancy something sweet or for giving you an energy boost. I put them into children’s lunch boxes and take a few with me when travelling. The recipe is not an exact science and I make my batches each time depending on what’s in the cupboards. Just stick to the rough proportions and add your personal favourites. Simply whiz all of the ingredients in a food processor until they form a firm dough ball. Take out of the mixing bowl and press into a lightly oiled loaf tin or baking tray. Press the dough into the pan to a thickness of around 2 cm. Alternatively, roll into a thick sausage shape and cover with tin foil. Place in the fridge to set for an hour or so. Cut into cubes or slices and enjoy!
What you'll need:
50g each of dates, dried apricots and sunflower seeds
100g raisins
100g porridge oats
30g wheatgerm
25g medium oatmeal
20g linseeds
25g goji berries and/or dried cherries
Juice and grated zest of 1 lemon
2 tablespoons cold-pressed rapeseed oil, plus a drizzle to grease the tin
